Restore shine to aluminium cookware without scratching

Aluminium darkens when exposed to high heat or alkaline dishwasher tablets — it is cosmetic, not dangerous, but it makes pans look neglected. Skip abrasive scouring pads; they leave micro-scratches that stain faster next time.
Fill the pan with warm water, a tablespoon of cream of tartar or lemon juice, and simmer gently for ten minutes. Let it cool, discard the liquid, and wipe with a soft cloth. For burnt bases, soak overnight with bicarbonate of soda and water, then use a wooden spatula to lift softened residue.
Hand-washing and thorough drying prevents water spots. If you use a dishwasher, expect gradual dulling — many cooks keep one favourite saucepan out of the machine for that reason.
